Ingredients
  

  • 2 cups gluten-free all-purpose flour with xanthan gum
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 3 large eggs
  • 1 cup milk or dairy-free alternative
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions
 

  • 1️⃣ Preheat your oven to 350°F (175°C). Grease and line a 9-inch cake pan with parchment paper.
  • 2️⃣ In a bowl, whisk together gluten-free flour, baking powder, baking soda, and salt. Set aside.
  • 3️⃣ In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well.
  • 4️⃣ Stir in vanilla extract and half of the dry ingredients. Add half of the milk, then repeat with the remaining flour and milk. Mix until just combined.
  • 5️⃣ Pour the batter into the prepared cake pan and smooth the top.
  • 6️⃣ Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • 7️⃣ Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • 8️⃣ Frost as desired and enjoy!
